The process can be integrated into existing seafood processing plant with minimal capital expenditure and without the requirement of technically skilled staff. The process produces shelf-stable gourmet products, which increases the export potential of the resulting products and allows the manufacturers to charge premium. The key advantage is that it allows the manufacturer to convert their "low-value" or "damaged" seafood into premium products.
Currently the process is being applied to mussel meat. Potentially the process can be applied to other seafood products.
